Scope

B.E.E.R. publishes original research in the science of beer and fermented beverages, including brewing chemistry and process, hop and malt genetics, yeast and microbial ecology, water chemistry and style reproducibility, sensory science and low-alcohol products, packaging safety, and drinking venues in the urban night economy. Laboratory results that reach the street are welcome; so is a street written as reproducible data.

Article types

• Article: a substantial advance, typically up to 3,000 words of main text and 4–6 figures.
• Letter: a concise method or result, up to 1,500 words and 3 figures.
• Review: mostly commissioned; presubmission enquiries are considered.

Style

Titles are declarative sentences. The abstract is a single paragraph without subheadings. Citations are numbered in Nature style. Figure legends take the form “Fig. 1 | …”. A data-availability statement is required.

Open access

Subscription and open access run in parallel. Open-access articles are free to read on publication under CC BY 4.0. Papers on this demonstration site are editorial style samples and are not a record of actual submissions.

Ethics

Human sensory evaluation requires ethics approval. Urban studies that record operator addresses must blur coordinates for privacy. The editors follow COPE guidance on competing interests and redundant publication.
